125gKarikaas Gouda Vintage is a firm highly complex flavoured cheese with some sweetness and a lingering taste in the mouth. A little goes a long way. May have some crystalisation – a sure sign of age. A beautiful cheese on its own, but perfect shaved to add the final touch to a dish of pasta, or a Caesar salad.

100gMaggie Beer Fig & Fennel paste is the perfect accompaniment with washed rind cheese, hard sheep’s milk cheese, goat’s cheese & blue cheese. For any paste left over from the cheese plate, try adding it to a ravioli filling of fresh ricotta, or melt with a little Verjuice and brush onto the scored fat of a leg of ham before baking

Blend it with Verjuice and walnut oil for a thick dressing over a salad of rocket, Parmigiano and toasted walnuts.
For a sweet option, try stirring some cubes of paste through a traditional rice pudding. -
