125gKarikaas Gouda Vintage is a firm highly complex flavoured cheese with some sweetness and a lingering taste in the mouth. A little goes a long way. May have some crystalisation – a sure sign of age. A beautiful cheese on its own, but perfect shaved to add the final touch to a dish of pasta, or a Caesar salad.

170gKarikaas Leyden Mature, the cheese flavours have had more time to develop, and strengthen, enhancing the aromatics. The cumin flavour is still quite fresh and the texture still creamy.

100gMaggie Beer Fig & Fennel paste is the perfect accompaniment with washed rind cheese, hard sheep’s milk cheese, goat’s cheese & blue cheese. For any paste left over from the cheese plate, try adding it to a ravioli filling of fresh ricotta, or melt with a little Verjuice and brush onto the scored fat of a leg of ham before baking
